Magic Black Bean Chocolate Cake
So tell me, are you a real “health freak’’ or a “pretend health freak” who cringes when you have to give up that favourite dessert?
If you are one of those with a sweet tooth but control eating that delicious decadent piece of chocolate cake worrying you will gain extra pounds, then you are at the right place. I am going to let you in on my secret today – a healthy one in fact. I have the recipe for the best and the healthiest chocolate cake ever. Trust me this will knock your socks off and you won’t even know what this cake entails.
For starters, this cake is flourless, eggless, gluten-free, no fat and with very reduced sugar content! Hold on, I know you, you must be wondering, ‘How the hell does it does taste like a good old chocolate cake?’ Trust me it does and you have to try it to believe it. I have tested it on several people, my husband included (health freak) and none of them ever guessed that this cake wasn’t the regular chocolate cake and could be so healthy thanks to the magic ingredient in it. I must admit I am yet to come across anybody who will dislike this, no flour, no sugar yet so chocolaty cake.
I love desserts. In fact, love desserts a lot. Who doesn’t right? I do not follow any diet restrictions, vegan, paleo or the likes but believe in portion control and a simple rule – avoid too much of anything. Sweet or Salt. Having said that, am not sure if it is the eating or making them that I enjoy more. But this I know for sure, sharing my bakes with my loved ones brings tremendous joy.
Everyone has his or her own idea of what’s healthy, and the pressure can be tough. But this one I stand by completely. Again, it is such a simple recipe and easy to remember – you will keep this one to make over and over again without feeling guilty. The black beans provide moistness to the cake. Added bonus, just dump all ingredients in a blender and you have the batter ready making clean up so easy. Couldn’t get any better? You will love this recipe for it will satisfy your sweet tooth without guilt.

INGREDIENTS:
1 400g can of black/kidney beans, drained or 1 cup/240 g cooked black /kidney beans
3 tbsp dutch processed cocoa powder
1 tsp instant coffee powder
1 tsp baking powder
3 very ripe medium-sized bananas or 3 large eggs
100 g or 1/2 cup honey
1/2 tsp vanilla paste or 1 tsp vanilla essence
Juice and zest from 1/2 orange
50 g or 1/2 cup dark chocolate chips
A pinch of salt
METHOD:
1. To prep, start by preheating the oven to 180°C
2. Grease and line the cake pan with parchment paper. You can choose an 8inch round pan, a loaf tin or a rectangular pan.
3. In a blender or a mixer jar, combine all ingredients, except the dark chocolate chips. Blend until all ingredients come together and lump free. If you do not find black beans substitute with kidney beans. Both the black beans and dutch processed cocoa powder lend a dark rich colour to the cake.
4. Pour the batter into a parchment lined cake pan.
5. Sprinkle the dark chocolate chips over the surface.
6. Tap the pan slightly to even out the batter.
7. Bake the cake for approximately 30-35 min. Check for doneness with a toothpick, and set aside to cool completely before removing it from the pan
The cake keeps fresh and moist in the fridge, for up to 5 days. Enjoy!
