Quick and healthy breakfasts are always on our agenda. This Berry Vanilla Chia pudding is perfect for those who are constantly on the rush.

Having grown up with warm breakfasts almost all my life, I got to the Chia seed bandwagon pretty late. Talk a fellow Indian and you will know what I mean. From wholesome upmas, filling dosas, feather-light idlis to peppy parathas, traditional theplas and pohas, there is a mind-boggling variety to choose from. But now, I am totally hooked to this Berry Vanilla Chia Pudding. Chia seeds is a super food loaded with fiber and packed with nutrients, like omega-3, calcium, potassium, and magnesium. This recipe is one of the easiest recipes you can make using chia seeds with very little pre-preparation.


This Berry Vanilla Chia seed pudding is easily made with few home ingredients like chia seeds, milk, greek yogurt, honey and vanilla. Chia seeds soak up the moisture from the milk and yogurt to give that creamy thick pudding like texture.

Here is Berry Vanilla Chia Pudding my way:

Berry Vanilla Chia Pudding

INGREDIENTS:

Serves 4

3/4 cup milk or almond milk

1 cup greek yogurt

2 tbsp honey

1 tsp vanilla extract

1/4 cup chia seeds

fresh berries, of your choice to serve

granola, to serve

sliced almonds, to serve

METHOD:

  1. Whisk milk, greek yogurt along with vanilla extract and honey until well combined
  2. Add chia seeds and whisk to combine
  3. Cover the bowl with plastic wrap and refrigerate overnight
  4. The chia seeds will now be puffed and well soaked up. Mix well again to evenly distribute chia seeds that have settled on the bottom
  5. Spoon into individual serving jars and layer up with berries, granola and nuts
  6. Enjoy chilled!
