Guacamole

My dear readers,

Pardon my laziness for I am still basking in the glory of my last vacation to North India during Easter. A rather short and tiring trip but  a pure delight from start to end. We set off to Delhi for a night with friends and continued our onward journey with them to Amritsar – a fascinating land of delicacies ranging from kulchas, dals, tikkas, aam papads etc and cheerful people. What mesmerized me the most was the aura of the Golden Temple. I could sit there for hours and soak in all the positivity. Even with my palate and mind satiated, I left Amritsar with a heavy heart — promising to come back soon. We ventured further to Palampur to join a dear friends’ wedding bash.

If you haven’t heard of Palampur – I would describe it as an abode of pastoral hues, vast tea gardens and the much longed for serenity. Nestled in Kangra district, Himachal Pradesh, the first glimpse of the small town was enough to make me fall in love with it. The mesmerising snow-clad mountain peaks stood tall, the silence of the valley wrapped my soul and the enchanting view from our resort comforted me as serenity got a new meaning the moment I reached Palampur. It offered me the solace and respite I was craving for from the hustle-bustle of daily, mundane life. Well, not totally true – I live in an equally beautiful countryside town with pastures as far as your eyes can see. But you know Denmark is pretty much a flat country and this hidden haven close to the Himalayas is spellbinding with its picturesque beauty. The mountain ranges are your constant companion as you move into Palampur. Pretty much got me back to my roots – Coorg. Serenity personified!! 

We spent most of our time enjoying the festivities around the wedding but did make a stop-over at Neugal Cafe for lunch — a government-run eatery as suggested by the locals. And most of what we had didn’t disappoint 🙂

The wedding was super fun as expected. Food, alcohol, merriment, glitter, chatter all around, excitement in the air, a hundred different delicacies to gorge on like there’s no tomorrow.

Embracing all the lovely memories we headed out to our last stop Agra – known as one of the most romantic destinations, to see the globally famous monument, the Taj Mahal. It is as majestic and dazzling in real as it looks in any of the googled photographs. You need to see it to believe it. The trip there was short but I take the best part of the vacation with me, back home.

Vacations are primarily fabulous because of the people we bring with us, and the memories we make along the way. This was one such trip with my closest set of friends. The idea of travelling back to reality is worse than reality but sitting here by my kitchen window and concluding this para isn’t such a bad feeling either 🙂

Well coming to the recipe today, you might wonder that I talk so much about my trip to India but end up with Guacamole. To be honest after having written so much, I didn’t want to write a recipe that had a long list of ingredients or steps to make 🙂  The trick to making perfect guacamole is perfectly ripe avocados with a splash of acidity to balance the richness. So here it is – yet another super simple dip that you can dish up in minutes with few ingredients. Serves as a delicious appetizer at house parties.

For 4-6 servings

INGREDIENTS:

2 Haas avocados, halved, and deseeded

1/2 medium onion, diced

1/2 jalapeno pepper or 2 green chili, seeded and minced

1 tomatoes, seeded and diced

1 tablespoon chopped coriander leaves

1 lime, juiced

Salt to taste

METHOD:

  1. In a large bowl place scoop the flesh from avocados onto the board. Mash it roughly.
  2. Add the diced onion, green chillies, coriander leaves, tomatoes and combine well.
  3. Add the juice from 1 lime, then season to taste with sea salt. Check for seasoning at this point and adjust as needed.
  4. Garnish with coriander leaves, and serve.
