Roasted Tomato Soup
Once the weather turns colder, all thoughts turn to ways to keep warm. Comfort food is on my mind – And what says comfort food better than soups. When done right, it becomes the perfect thumbs up for the cold-weather craving. I love soups and many a times make it my one-pot meal on a lazy evening. My Roasted Tomato Soup is one such easy recipe. A bowl of soup is one excellent way to make sure you are getting portions of veggies. And it makes staying healthy so easy not to forget they are so quick to make. Winter makes it hard to stay healthy. Instead of binging on snacks, a bowl of soup is definitely a go-to meal. Not only it helps to beat those hunger pangs, but will also act as an appetite suppressor that fills you up before you go in for large dinner servings.
I am starting off the soup series with one of my favorites. You wonโt believe how simple it is โ roast, blend and dilute. It is that easy. ๐ I try and make my soups as healthy as possible with less fat, no additional cream to make it rich. The secret to give it this creamy texture is to add a potato that gives it body.
Get going! Stay healthy. Here is how to make Roasted Tomato Soup my way.
INGREDIENTS:
4 fresh tomatoes
2 large cloves garlic, peeled
1 medium onion, roughly diced
1 small potato, roughly diced
1 tbsp extra-virgin olive oil
Salt to taste
Freshly ground black pepper
2 cups chicken/vegetable stock
2 bay leaves
METHOD:
- Preheat oven to 200 degrees C
- Wash and cut the tomatoes into halves.
- Arrange in an ovenproof dish along with bay leaves, potato, garlic cloves, and onions
- Drizzle with olive oil and season with salt and pepper.
- Roast for 10 to 15 minutes, or until brown and caramelized.
- Remove from the oven and discard the bay leaves.
- Transfer the rest to a blender.
- Puree until smooth and transfer to the saucepan.
- Add the stock and bring to a boil. If you do not have stock at hand, you could use stock cubes and add water. Else totally skip the stock /stock cube and replace it with water. The stock adds additional flavor to the soup.
- Check for seasoning at this point, if needed.
- Serve hot with garlic bread and cream if required.
